Char Kuey Teow

Ingredients
1 packet soaked Kuey Teow
10 large prawns
1/2 cup boiled cockle meat
2 eggs lightly beaten
1/2 cup chive
1 cup bean sprout
fried onion
1 table spoon boh chili
3 cloves garlic and 2 cloves shallot, finely crushed
1 tablespoon MH Mohd sweet and creamy soy
sauce, MH Mohd salty soy sauce, thick soy sauce.
1 teaspoon anchovy flavouring
salt and sugar as required
oil for frying

Directions
- Heat oil in a frying pan
- Fry onions until fragrant, add in the boh chili and prawns. Stir for
a short while with a high flame
- Add the eggs, stir, and then add the kuey teow and cockles.
- Add all flavourings and stir with a medium flame.
- Finally, add the bean sprout and chive.
- Place the kuey teow in a bowl and sprinkle fried onions, and finely
sliced spring onions and chinese parsley
- Serve hot with pickled chili
